This dish is such a life saver!
Needs free range, organic chicken, bulb of garlic, olive oil and seasoning.
Take your chicken and make holes across the breast and thighs with a sharp knife. Push around 10-15 cloves of garlic into the holes. Brown the chicken in a little olive oil add salt and pepper and place in the slow cooker on HIGH for around 6-8hrs.
Result! Delicious roast chicken to serve with mash, veg and yorkshires.. yum yum!
Plus… make a scrumptious chicken curry with the leftover meat, just add veg, tomatoes and spices AND use the chicken carcass, carrot, celery herbs to make excellent chicken stock for soup. This can be left for 12 hrs or so on LOW in the slow cooker and tastes divine.. really feel good food!
